Turkey Meatball Stew with white beans, zucchini, and diced tomatoes with creamy goat cheese rice grits. I make the turkey meatballs gluten free by using crushed crisp rice cereal and season with onion, garlic, Worcestershire sauce, parsley, salt and pepper and mix it all up with an egg. Brown on all sides over medium heat in olive oil, finish with a splash of wine, and reduce. The stew is simply sliced zucchini cooked in some chicken broth, with a can of drained Cannellini beans and a can of diced tomatoes with the juice. Season liberally with salt, pepper, and Italian seasoning blend. When ready to serve, add the meatballs and spoon into bowls. Goes great with rice or grits. I made @deltabluesrice rice grits according to package instructions and stirred in some butter flavored coconut oil, unsweetened almond milk, and goat cheese.
