Creamy Dairy Free & Gluten Free Gnocchi Chicken Sausage soup with butternut squash and spinach. @delallofoods gluten free gnocchi are the perfect little pillows to sink your teeth into. Chicken broth base gets a creamy transformation with a cup of coconut milk whisked in before adding the gnocchi. I used precooked frozen squash chunks to save time and browned the chicken sausage in olive oil for a little extra flavor before adding to the soup. #eyesonthegoodlife #theresaskitchen
Gluten Free Chicken Milanese. I was out of arugula, so spinach it was! Chicken breasts are sliced in half to make them thinner, then pounded flat and seasoned with sea salt & garlic powder. Dipped in GF flour, the egg wash, the GF “Panko” which I made by crushing Rice Krispies. I added some salt, fresh parsley and lemon zest. Fried in sunflower oil, then let it finish in a 250 oven while I made the salad and dairy-free mashed potatoes. #eyesonthegoodlife #theresaskitchen
