I don’t create brand new dishes every day. I wish I had that many creative ideas inside my head, but I don’t! So, yes, we repeat meals. We have some menu items that are tried and true family favorites, then there are recipes that I made once or twice and forgot about – not because they weren’t good, but they just don’t make a regular appearance in the meal rotation.
I thought it would be a good idea to re-visit some of the recipes I haven’t made in awhile and create a meal planner. For the first week, I chose a fish entree, two chicken, and a beef dish as well as one crockpot recipe. I also try to rotate between rice, potatoes, and rice noodles for our starch so we aren’t just eating rice every day (boring). Most of my recipes serve 2-3 people, since I primarily just cook for my husband and me. Some serve more and those that don’t can be easily increased to yeild more. These are all gluten-free and dairy-free recipes, however if you don’t subscribe to those diets, you can use the “real” stuff!
Week 1 Meal Planner
Monday – Crockpot Chicken Marsala Serve with garlic mashed potatoes
Tuesday – Better Than Takeout Beef and Broccoli with Rice
Wednesday – Salmon Patties with Old Bay Potatoes
Thursday – Deconstructed Chicken Noodle Bowls
Friday – I don’t cook on Fridays! Treat yourself and GO OUT!
Saturday – Lemon Risotto with Shrimp
Sunday – Fire up the grill! Steaks and baked potatoes with San Marzano Tomato Salad, or a Caprese Salad
My basil died already as of last week but my tomatoes keep coming, I’m so sad about my basil but I guess it’s a seasonal thing.
