Caprese Salad

One of my favorite summertime dishes.  Super easy to make and a great way to use up those fresh tomatoes from the farmer’s market.  And it’s super easy, too:  alternate slices of fresh tomato and mozzarella with fresh basil leaves.  Drizzle with a little olive oil and balsamic, or top with a drizzle of balsamic glaze and serve with a nice crusty bread.  I also like to mix it up by adding cucumber or avocado slices.

Be sure to use a good quality fresh mozzarella!  You can get this balsamic glaze on Amazon:
