OK, guys, these cookie bars come from a mix; all you add is butter, eggs, vanilla, chocolate chips and pecans. They are so easy to whip up and so good! Our House Deliciously Gluten-Free is hands-down the BEST GF cookie mix I’ve tried yet. And you know what the best part is? The mix only has 6 ingredients – no weird stuff! Just rice flour, cane sugar, brown sugar, baking soda, salt, and xanthan gum. You can whip up the mix as-is, or stir in things like chocolate chips, raisins, nuts, whatever you like. My recipe below uses Enjoy Life dairy-free chocolate chips and pecans.
Our House Deliciously Gluten-Free is also free of allergens, so if you suffer from allergies to nuts, dairy, or eggs, you’re in luck. The mix calls for butter and 2 eggs; we are dairy-free at our house so I use coconut oil and it works perfectly fine. You can drop by spoonfuls onto a parchment paper lined cookie sheet, or spread out to make bars. One mix will make 1/2 of a cookie sheet pan of bars (approximately 8″ x 11″)

Gluten-Free and Dairy-Free Chocolate Chip Pecan Cookie Bars
1 box of Our House Deliciously Gluten-Free Cookie Mix
3/4 cup coconut oil at room temperature
2 eggs
1 teaspoon vanilla
1/2 to 3/4 cup Enjoy Life Dark Chocolate Morsels
1/3 cup chopped pecans
Mix the cookie mix and coconut oil in a bowl with an electric mixer until the coconut oil is completely mixed in and a loose, dry dough begins to form. Add the eggs and vanilla and continue to mix for 3-4 minutes or until the dough is of uniform consistency and color. Stir in the chocolate chips and pecans with a large wooden spoon, then spread into a parchment lined pan (or drop by spoonfuls for individual cookies). The bars should be approximately 1/2 inch thick and about 8″ x 11″. Bake at 350 degrees for 20 minutes. Allow to cool, then cut into bars. Store air-tight at room temperature for up to a week.
