#halfwayto94: Reflections on my 47th Birthday

Birthdays: I love to celebrate them – for other people. I find it enjoyable to go out of my way to make sure that my kids and husband have a […]

Four Beauty Favs

I have so many beauty products, it’s a little ridiculous. From skin treatments and makeup to hair products and tools, the cabinets in my vanity are full! I think the […]

Gluten-Free Dairy-Free Beef Stroganoff

As promised, here is the recipe for dairy-free gluten-free beef stroganoff. Of course, you can make this “the regular way” by using flour, sour cream, and regular egg noodles if […]

A Middle-Age Friday Night

Friday Nights.  They ain’t what they used to be!  In my college years it meant a weekend of work, drinking, and hanging out with friends (and more drinking).  During the […]

Vacation Diaries: Riviera Maya Mexico

The last time we were in Mexico was 7 years ago.  We took our girls down there for a family Christmas on the beach.  We had a lovely time, however […]

Quicker, Skinnier Cassoulet

Crispy Oven-Fried Gluten-Free Chicken Tenders

Ever since my husband went gluten-free three years ago, I have been experimenting to develop a good chicken tender recipe.  He is a chicken tender connoisseur (if there is such […]

A Cure for the January Blahs

January seems to be the dreariest, coldest, most miserable month of the year.  It follows a festive holiday season that begins in November and lasts through New Year’s Day.  Then […]

Healthy and Hearty

We recently moved into a new house.  And since today is January 1st, that means we moved OVER THE HOLIDAYS.  We didn’t *have* to do it, but we’ve been working […]

My Favorite Trader Joe’s Product

Rice.  Yep, rice – how boring is that?  I have been buying their frozen brown rice since my very first trip to a Trader Joe’s several years ago.  I also […]

Souper Saturdays

Split pea soup.  Let’s be completely honest:  it’s not pretty.  It tastes delicious, but for some reason, it just doesn’t take the best photos.  But the ingredients that go into […]

Pie! My pecan pie and pumpkin slab pie are dairy-free, gluten-free and corn-free. My pecan pie uses Lyle’s Golden Syrup which is pure cane sugar - no corn syrup. I used @smittenkitchen ‘s recipe which is fab! Go to her site and check it out. The new Nestle’s Carnation dairy-free almond cooking milk is the bomb! It’s in the pumpkin pie (as well as my dairy-free green bean casserole-recipe coming soon!) and Bob’s Red Mill gluten-free flour is my go-to for their crusts. Recipes are up on my blog, Eyes On The Good Life - link is in my bio! #theresaskitchen #eyesonthegoodlife #pie #thanksgiving #dairyfree #glutenfree #pecanpie #pumpkinpie #slabpie #dessert #lylesgoldensyrup #carnationdairyfree #bobsredmillglutenfree
